Ingredients:

Directions:

  1. Beat eggs, sugar and vanilla together in a bowl.
  2. Add the egg mixture to the dates, nuts and cornflakes, stirring to coat well.
  3. Drop by spoonsful onto cook sheets covered with parchment paper.
  4. Bake at 350 F until golden brown - depending on your oven you need to watch carefully to be sure they don't overcook and get too hard.
