Ingredients:

Directions:

  1. Rinse or wash the quinoa according to the directions on the packet.
  2. Bring the stock to the boil in a large saucepan or stockpot, add the quinoa and garlic, and let simmer for approximately 15 minutes until all the water is absorbed and the quinoa is soft but a little 'al dente'.
  3. Add in the chickpeas, green beans, sweet potato or squash, and pine nuts, and stir through until heated well.
  4. Stir the parsley through just before serving.
