Quick Mashed Sweet Potatoes

Ingredients:

  • 1 (29 oz) can sweet potatoes
  • 3 tbsp butter
  • salt and pepper

Directions:

  1. Cook sweet potatoes and liquid in medium size saucepan until heated through approximately 10 minutes.
  2. Drain off liquid.
  3. Add butter and half and half to pan.
  4. Beat or mash to desired consistency.
  5. Serve with butter, salt and pepper.
