Quick Corn and Zucchini Saute

Ingredients:

  • 1 medium red bell pepper , cut into julienne strips
  • 1 medium green bell pepper , cut into julienne strips
  • 1/4 cup vegetable oil
  • 2 cups corn (may use frozen whole kernel, thawed if fresh isn'tsp available)
  • 1/2 tsp salt
  • 1/2 tsp dried italian seasoning

Directions:

  1. Saute the zucchini and peppers in oil in a large skillet for 5 minutes or until crisp-tender.
  2. Add the corn, garlic, salt, and Italian seasoning, and saute for 3 to 5 minutes or until the corn is crisp tender.
