Ingredients:

Directions:

  1. Preheat oven to 180°c.
  2. Boil pumpkin in water with 2 tbsp of sugar til soft.
  3. Drain off water & let cool for 3 minutes.
  4. Drain off remaining water.
  5. Mix flour, sugar, baking soda & baking powder in a bowl.
  6. Crush walnuts, save 10 halves for later.
  7. Mix in vege oil, egg, pumpkin and a tbsp of cinnamon.
  8. Combine flour & walnuts mix. Add in flour bit by bit & stir constantly.
  9. Put muffin dough into muffin tray & fill till 1/2 full. Place halves walnuts on top & bake for 20 minutes.
