Pumpkin Spice Muffins (with cream cheese frosting)

Ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 1.5 tsp cinnamon
  • 1/2 tsp salt
  • 4 tbsp cold butter , cut into pieces
  • 1/2 cup evap milk
  • 1 egg
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Preheat oven to 400 - grease 12 muffin tins
  2. Sift flour, baking powder, cinnamon, pumpkin pie spice and salt - cut in butter
  3. In separate bowl, mix pumpkin, evap milk, egg and vanilla - pour pumpkin mixture into flour mixture - fold gently to combine
  4. Pour into greased muffin pan - sprinkle with topping mixture
  5. Bake for 25 minutes - allow to cool in pan for 15 minutes - then remove and top with frosting
  6. For frosting: mix all ingredients oh high until soft and whipped - spread onto cooled muffins - store in fridge (icing will soften)
