Banana Bread (from Africa!)

Ingredients:

  • 1/4 lb butter or 1/4 lb margarine
  • 1/2 cup white sugar
  • 1 tsp vanilla
  • 1 tbsp milk
  • 2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1 tsp salt
  • 3/4 cup chocolate chips (and/or nuts , or anything else you would like) (optional)

Directions:

  1. Cream butter.
  2. Beat in sugar.
  3. Mix in egg yolks.
  4. Mix in bananas, milk, vanilla.
  5. Mix dry ingredients (flour, spices, salt, soda, powder) in a separate bowl and then mix into butter/sugar/banana mixture beat egg whites until frothy, then fold into batter.
  6. Put batter into greased loaf pan (or an 8x10 pan will work also).
  7. Bake at 350º for about an hour (35 mins. for 8x10 pan) or until golden brown, and deliciously warm from the oven.
