Ingredients:

  • 2 cups flour
  • 1 tsp salt
  • 1/2 cup brown sugar
  • 3 tbsp oil
  • 3/4 cup pumpkin
  • 1 3/4 cups buttermilk
  • 1 egg
  • 1 tsp vanilla

Directions:

  1. Mix flour through brown sugar in a large bowl. In a medium bowl mix oil through vanilla. Mix wet into dry and whisk to combine. Cook on griddle until done. Serve with maple syrup or whipped cream... or both!
