Pumpkin Pasta with Sausage

Ingredients:

Directions:

  1. Bring a large pot of water to boil. When boiling salt water and cook penne until al dente. Drain pasta.
  2. In a deep skillet over medium-high heat add oil and sausage. Crumble and brown sausage. Move sausage to one side and add mushrooms, garlic and onions to other side. Cook until mushrooms brown, then season with salt and pepper.
  3. Combine mushrooms and meat. Add wine and the stock and heat for 1 minute. Stir in pumpkin. It'll be thick. Stir in cream, sage, nutmeg, cinnamon. Adjust heat to low.
  4. Combine pasta and pumpkin mixture. Top with cheese and chives.
