Ingredients:

  • 1 cup sugar
  • 2 tsp vanilla
  • 4 eggs
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup raisins
  • 1/2 cup chopped nuts
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/3 cup milk

Directions:

  1. In a mixing bowl, stir together the butter, sugars, pumpkin, vanilla, and eggs; beat well.
  2. Stir in remaining ingredients.
  3. Pour into a greased jelly roll pan.
  4. Bake in a 350° oven for 20-25 minutes or until top springs back when touched.
  5. Let cool.
  6. To make cream cheese frosting: beat all ingredients together.
  7. Frost cooled pumpkin layer; let cool completely and cut into bars.
  8. Number of bars depends on how big or small you cut them.
