Pumpkin Banana Nut Muffins

Ingredients:

  • 1/4 cup wheat bran
  • 2 tbsp flax seeds
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger
  • 1/4 tsp salt
  • 1 large banana (overripe, about 3/4 cup)
  • 4 large eggs
  • 3/4 cup packed brown sugar
  • 3/4 cup oil
  • 1 cup crushed walnuts or 1 cup pecans

Directions:

  1. Preheat oven to 350F and line muffin tins with paper cups.
  2. Combine flour, baking powder, baking soda, spices, and salt in a large bowl. Stir until mixed well.
  3. In a separate bowl combine all the other ingredients and stip until smooth.
  4. Little by little, add the flour mix to the pumpkin mix. Mix only until combined.
  5. Divide into muffin pan and sprinkle with graham cranker crumbs or cinnamon sugar if desired.
  6. Bake for 25 to 30 minutes or until a toothpick will come out of a muffin without batter on it.
  7. Transfer muffins to a wire rack and cool.
  8. Enjoy!
