Ingredients:

  • 1.5 cup 2% milk warm
  • 1.5 tbsp brown sugar
  • 2 tsp salt
  • 1 package yeast
  • 2 oz butter cut into pieces
  • 3/4 cup baking soda soda bath
  • 1.5 quart water soda bath

Directions:

  1. Combine milk, sugar and salt in mixer.
  2. Sprinkle yeast into mixture, wait 5 min.
  3. Add butter and flour, mix with dough hook, (The longer the chewier),
  4. Cover, set for 60 minutes.
  5. Add baking soda to 1.5 qt water in large pot, bring to boil.
  6. Line cookie sheets with parchment paper.
  7. Beat egg yolk and 1 tbsp water in small bowl.
  8. Preheat oven to 450 degrees F.
  9. Divide dough into 8 pieces.
  10. Roll out into long cylinder, twist into pretzel shape.
  11. Boil pretzels one at a time in soda bath for 30 seconds, Then place on lined cookie sheets.
  12. Brush on egg wash, then sprinkle with pretzel salt or other toppings.
  13. Bake for 12-14 mins at 450 degrees F.
