Ingredients:

  • 2 cups bran flakes
  • 1 1/4 cups milk
  • 1/2 tsp salt
  • 4 tbsp butter
  • 1 egg
  • 1/2 cup raisins

Directions:

  1. Soak the bran flakes in the milk for 10 minutes. Sift together the flour, salt, and baking powder.
  2. Cream the butter and sugar, then beat in the egg. Stir in alternate spoonfuls of the soaked bran flakes and the flour mixture. Gently fold in the mashed bananas and the raisins.
  3. Line a muffin tin with fluted paper cups and half fill each with the mixture. Bake in the 350 degree F preheated oven for 30 minutes.
