Ingredients:

  • 6 -8 small red potatoes, skin on ,scrubbed with a stainless steel pot scribber
  • extra virgin olive oil , in a pump-up sprayer
  • 1 tbsp svaneti salt

Directions:

  1. Preheat oven to 400°F.
  2. Cut the potatoes into 1/8th wedges.
  3. Arrange the wedges skin side down on a cookie sheet.
  4. Spray or brush with olive oil.
  5. Sprinkle generously with Svaneti salt.
  6. Bake for 12-15 minutes.
  7. Think very CRISPY!
  8. Goes well with almost everything, beast, fish, or fowl.
  9. A good hardy red table wine and the rest of the evening seems to take care of itself.
