Pot O' Gold Bread (Quick Bread With Orange Glaze)

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp salt
  • 5 large egg yolks
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1/2 cup orange juice
  • 1/2 tsp orange zest

Directions:

  1. Preheat oven to 350°F.
  2. Grease and flour a 9X5X3 bread pan (or use Pan Release, Professional Pan Coating (Better Than Pam Spray!)).
  3. In large bowl, mix flour, sugar, baking powder and salt.
  4. Add butter, egg yolks, milk and vanilla and mix well.
  5. Pour batter into pan and bake for 60-70 minutes.
  6. Remove from oven and cool on a wire rack. While bread is cooling prepare the glaze.
  7. For Glaze:.
  8. In sauce pan combine orange juice, zest and powdered sugar. Heat over medium heat, stirring constantly, until it comes to a boil.
  9. After bread has cooled remove from the pan and place on wax paper. Poke holes in the top of the bread with a fork, or a long toothpick (I use a bamboo skewer). Pour the warm glaze over the top slowly, a little at a time, to fully saturate the bread.
