Ingredients:

  • 1 medium onion, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/4 tsp cumin , add more if it suits your tastes.
  • new mexico chili powder can be used along with the cumin to taste. i've used it but i didn'tsp measure.

Directions:

  1. Cube ribs and brown pork in lightly oiled skillet.
  2. Add onion and saute until limp. Drain fat.
  3. Combine pork, onion and remaining ingredients in crockpot.
  4. Cook on low heat for 5 hours to 6 hours
