Pork Salad With Cabbage Slaw

Ingredients:

Directions:

  1. Sprinkle pork with pepper and nutmeg.
  2. Place meat on the unheated rack of broiler pan.
  3. Broil 4 to 5 inches from the heat for 18 to 25 minutes or until no pink remains and juices run clear, turning the meat once during cooking.
  4. Meanwhile, in a large bowl combine coleslaw mix and apple, set aside.
  5. In a medium skillet cook bacon slices until crisp.
  6. Drain and crumble bacon, set aside.
  7. Add vinegar, apple juice, honey, mustard and craway seed to skillet.
  8. Bring to boiling.
  9. Pour over coleslaw mixture; add crumbled bacon.
  10. Toss to mix.
  11. Arrange coleslaw mixture on individual serving plates.
  12. Cut pork into 1/4 inch thick slices.
  13. Arrange pork slices on coleslaw mixture.
  14. Garnish with additional apple slices if so desired.
