Pork Medallions With Cider Sauce

Ingredients:

Directions:

  1. Heat large skillet over med-high heat and add oil.
  2. Season pork with salt and pepper lightly on each side.
  3. Sear pork about 5 minutes on each side or until brown.
  4. Add cider, vinegar and wine and bring to a boil.
  5. Cover and cook 5 more minutes.
  6. Remove lid and reduce heat to med., simmer 5 more minutes.
  7. Remove pork to a plate and keep warm.
  8. Simmer liquids until reduced to 1/2 cup.
  9. Spoon sauce over pork and enjoy!
