Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp salt
  • 1/4 cup lemon juice (optional)
  • 1/8 cup powdered sugar (optional)
  • berry jam (optional)

Directions:

  1. Preheat oven to 450F
  2. Grease (I use PAM spray) 6 pop-over cups, muffin cups, or custard cups
  3. Beat eggs just slightly in a medium bowl
  4. Mix in milk, flour, salt just until combined
  5. Divide batter among cups
  6. Bake at 450F for 20 mins for pop-over cups, 10 for muffin cups (I recommend changing the temperature after 15 minutes to give the oven time to cool)
  7. Bake at 350F for 20 mins for pop-over cups, 10 for muffin cups
  8. Remove pop-overs from baking cups with knife or spatula
  9. Serve immediately sprinkled with lemon juice and then powdered sugar OR with berry jam
  10. To reheat, place in oven at 400F for 5 minutes or just toast in a toaster oven for 2-3 mins.
