Poor Knights or Rich Knights (Köyhät Ritarit)

Ingredients:

  • 1 slice french bread
  • 1 egg
  • 1 1/4 cups milk (3 dl)
  • 1 pinch salt
  • 1 -2 tbsp butter or 1 -2 tbsp margarine
  • 1 tbsp lingonberry jam
  • whipped cream (optional, to make rich knights )

Directions:

  1. Cut a thick slice of bread for each person, recipe set for 1 person.
  2. Whip the egg and mix in milk and a pinch of salt.
  3. Dip the slice in the milk and egg mixture.
  4. Fry until golden brown on both sides.
  5. Serve hot topped with a bit of lingonberry jam.
  6. If you top it all off with whipped cream, your poor knights become rich knights .
