Pink Lady Cadillac Pie

Ingredients:

  • 1 1/2 cups finely crushed vanilla wafers (lil niller wafer recipe or store bought)
  • 1/4 cup sugar
  • 3/4 cup orange juice
  • 1 1/2 cups heavy cream , whipped

Directions:

  1. Blend vanilla wafers, butter, and sugar together and press firmly into 9-inch pie plate. Bake at 375 degrees for 5 minutes. Cool & chill.
  2. Heat orange juice in double boiler, add marshmallows, and stir until melted.
  3. Cool mixture and chill in refrigerator until partially set.
  4. Fold in whipped cream, then raspberries
  5. Pour filling into crust.
  6. Top with extra whipped cream, if desired.
  7. Serves 8
