Pickled Onion Rings

Ingredients:

  • 1/2 large onion
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 1/2 tbsp sugar
  • 1/4 tsp salt

Directions:

  1. Cut onion into thin slices.
  2. Separate into rings and put into a two cup sterilized jar.
  3. Pour boiling water over to cover onions.
  4. Allow to cool, then drain.
  5. Mix together vinegar, water, sugar, salt and hot pepper sauce and bring to a boil.
  6. Pour over onion rings.
  7. Cover tightly and refrigerate.
  8. Use after 2 days.
  9. Store in refrigerator up to 2 months.
  10. Good with hamburger, cheese sandwich, egg salad sandwich and as a pickle with regular meals.
