Ingredients:

  • 6 meduim baker potato's
  • 1 bunch green onions
  • 1/2 cup sour cream
  • salt to taste
  • sausage or bacon (optional)

Directions:

  1. Wash and microwave or bake potato's (10 minutes in mic, 30 in oven)
  2. Cut in half and scoop out the middles leaving a thin potato shell, save in a bowl
  3. Slice the hollowed halves into 4's
  4. Spread on baking sheet and sprinkle with olive oil, pepper and salt
  5. Broil for 10 minutes
  6. While potato's broil, mash potato's with sour cream, cottage cheese, green onion, salt and pepper to taste
  7. Scoop mash potato's onto skins and top with chedder cheese, and cooked sausage or bacon
  8. Broil a second time for 10 minutes or unti crispy
  9. Let sit for 3 minutes
  10. Eat and enjoy!
  11. Be carefull not to undercook, or the result will be hard potato skins...YUCK!
