Ingredients:

Directions:

  1. Bring a large pot of water to a boil.
  2. Add salt and pasta.
  3. Cook pasta until al dente, according to manufacturers’ directions.
  4. In a large skillet, warm oil over medium heat.
  5. Add garlic, and cook, stirring until golden, about 2 minutes.
  6. Add tomatoes, oregano, crushed red pepper, salt, and pepper.
  7. Reduce heat to low, and cook, stirring, for 3 minutes.
  8. Use a slotted spoon to transfer pasta to skillet with tomatoes.
  9. Remove from heat.
  10. Stir in olives and parsley.
  11. Transfer to serving bowl and sprinkle with cheese.
  12. Serve with additional cheese, if desired.
