Pecan Topped Pumpkin Bread

Ingredients:

  • 31/2 cup flour
  • 1 tsp salt
  • 1 tsp g. cinnamon
  • 1 tsp g nutmeg
  • 1/2 tsp g allspice
  • 1/2cup canola oil1/2cup low-fat buttermilk2 lg. eggs

Directions:

  1. Preheat oven to 350. Combine flour with next 6 ingredients9through allspice) in a bowl. Place sugar,egg substitute,oil,buttermilk and eggs in a large bowl;beat with a mixer at high speed until well blended
  2. Add water and pumpkin,beating at low speed till blended. Add flour mixture to pumpkin mixture,beating at low speed just till combined.
  3. Spoon batter into 2(9x5 ) loaf pans coated with spray. Sprinkle pecans evenly over batter. Bake at 350 for 1 hour or till wooden pick inserted in center comes out clean. Coo 10 mins in pans on wire rack;remove from pans. Cool completely on rack.
