Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ginger
  • 1/8 tsp allspice
  • 3/4 cup brown sugar
  • 1 egg
  • 1/2 cup yogurt
  • 1/4 cup oil
  • 1/2 tsp vanilla
  • 3/4 cup grated carrot
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 400.
  2. Combine dry ingredients in a large bowl.
  3. Beat together wet ingredients and pour into dry mixture.
  4. Stir just until combined.
  5. Fill muffin cups and bake for 15- 17 minutes.
