Pecan Sticky Muffins

Ingredients:

  • 2 cups flour
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup canola oil
  • 1/2 cup brown sugar , packed
  • 1 tsp. vanilla
  • 1/4 cup brown sugar , packed

Directions:

  1. Preheat oven to 350
  2. Line 2 muffin tins with paper liners
  3. In mixing bowl, combine flour, baking powder, cinnamon and salt
  4. In another bowl, beat eggs, milk, oil, sugar and vanilla until smooth
  5. Stir into dry ingredients just until moistened
  6. Spoon 1 tsp. butter, 1 tsp. brown sugar and 1 heaping tbls. of pecans into each muffin container
  7. Top with 1/4 cup batter
  8. Bake 25-30 minutes
  9. Invert pan onto foil
  10. Let stand 2 minutes, then remove from pan
