Pear And Watercress Soup With Stilton Croutons

Ingredients:

Directions:

  1. For the Croutons:
  2. Heat the butter and oil and fry the bread until golden. Drain on paper towels, Transfer to a sheet pan lined with parchment paper, top with cheese, broil in oven until bubbling.
  3. For the Soup:
  4. Reserve 1/3 of the watercress leaves
  5. Place the rest of leaves and stalks in a pan with the pears and chicken or veggie stock. Season with salt & pepper.
  6. Simmer for about 15-20 minutes. Reserving a few leaves for garnish add the remaining 1/3 of the leaves and immediately blend in a food processor until smooth.
  7. Pour all the soup back into the pan and stir in the cream and lime juice. Put back on the stove and reheat stiring gently until warmed through.
  8. To Serve. Pour soup in bowls. Garnish w/ Croutons and Watercress leaves.
