Ingredients:

Directions:

  1. Season chicken with salt, pepper, curry powder.
  2. Sear chicken in oil in 4-quart pot; cook until almost done.
  3. Remove chicken; pour out excess oil.
  4. Add butter to same pan; stir in flour.
  5. Stir in stock, cayenne pepper and tomatoes.
  6. Add honey, potatoes, bell peppers, onions, jalapenos and coconut milk.
  7. Return the chicken to the pot.
  8. Bring to a boil to finish cooking and thicken liquid.
  9. Put chicken in serving bowl.
  10. Ladle sauce on top.
  11. Garnish with cilantro.
