Pear Almond Nutmeg Waffles

Ingredients:

  • 3 cups biscuit mix
  • 1 1/2 cups mashed, peeled, ripe pears (about 2 medium)
  • 1 1/2 cups milk
  • 1/2 cup finely chopped almonds
  • 2 eggs
  • tip: decrease the nutmeg to 1 tsp and add 1 tsp ground cinnamon and 1/4 tsp ground ginger to the batter.

Directions:

  1. Preheat oven to 200 degrees.
  2. Heat waffle iron according to manufacturer's directions. Spray with nonstick spray.
  3. In a large bowl, whisk together biscuit mix, pears, milk, almonds, eggs, and nutmeg until incorporated. Pour about 1/3 cup of the batter or the amount suitable for your waffle iron on center of hot waffle iron. Close the lid and bake until lid doesn't stick to waffle when lifted, 4 to 6 minutes. A good indicator is when the steam begins to stop.
  4. Place on an ovenproof plate and keep warm in preheated oven. Repeat until all are cooked.
