Ingredients:

  • 1/2 cup sugar
  • 1/2 cup brown sugar , packed
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • additional sugar

Directions:

  1. In a mixing bowl, cream butter and sugars.
  2. Add peanut butter, egg, and vanilla and beat until smooth.
  3. Combine the flour, baking soda, and baking powder.
  4. Add to creamed mixture and mix well.
  5. For easier shaping, chill the dough for 1 hour.
  6. Shape dough into 1 balls and place 2 inches apart on ungreased baking sheets.
  7. Flatten each ball by crisscrossing the tines of a fork dipped in sugar.
  8. Bake at 375 for 10 to 12 minutes or until bottoms are lightly browned and cookies are set.
