Peanut Butter and Jelly Bars

Ingredients:

  • 1/4 cup shortening
  • 2 eggs
  • 2 tsp vanilla
  • 1 pinch salt
  • 1 1/4 cups flour
  • 1/2 cup oats
  • 2 tbsp flour
  • 1 dash cinnamon
  • 2 tbsp shortening

Directions:

  1. In a large bowl, combine first 6 ingredients.
  2. Stir in flour.
  3. Spread in a greased 9x13 inch pan.
  4. Combine dry ingredients of streusel; cut in shortening.
  5. Sprinkle streusel over cookie dough.
  6. With a small spoon, make 24 depressions in the dough (6x4).
  7. Bake at 375 degrees for 20 minutes.
  8. Take out of oven; press depressions again.
  9. Bake for 10 more minutes.
  10. Take out of oven and spoon 1/2 tsp jelly into each depression.
  11. Bake for 5 more minutes.
  12. Cool in pan.
