PB&J Sandwich Cookies With M&Ms

Ingredients:

  • 1/2 cup butter
  • 1/4 cup shortening
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 2/3 cups flour
  • 1/2 tsp baking powder
  • 1 cup m
  • 1/2 cup peanuts, chopped finely
  • 1/2 cup grape jam

Directions:

  1. Mix together first four ingredients until light and fluffy.
  2. Add egg and vanilla and mix well.
  3. Then add flour, baking soda and baking powder, mixing in well.
  4. Hand mix in nuts and M&M Baking Bits.
  5. Drop by rounded tsp onto ungreased cookie sheets.
  6. Bake 8 to 10 minutes at 350 or until light golden.
  7. Let cool for 2 minutes on cookie sheets then transfer to wire racks and let them cool completely.
  8. Then spread on 1/2 tsp jam and sandwich with another cookie.
  9. Can be stored in an airtight container for a week to 2.
