Pasta with Broccoli and Tomatoes

Ingredients:

  • 1 lb broccoli
  • 2 large tomatoes
  • 6 oz. spaghetti
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 24 large black olives

Directions:

  1. Cut broccoli into small flowerets with about an inch of stem. Peel the remaining stems and dice into small pieces. Bring a large pot of water to a boil. Add salt and submerge tomatoes for about 10 seconds. Remove. Peel and seed tomatoes, cut into large pieces.
  2. Add broccoli to boiling water and cook 3-4 minutes, until just tender. Remove and plunge into a basin of cold water to stop cooking and to retain the bright green color. Drain and set aside.
  3. Cook pasta in boiling water and stir.
  4. While pasta is cooking, warm oil in a skillet with garlic and red pepper flakes. When hot, add tomatoes. Stir gently and cook for several minutes.
  5. When pasta is done, return the broccoli to the water to warm, then pour pasta to and broccoli into a colander. Transfer to a warm serving bowl. Add the tomato mixture, olives, parsley, and black pepper to taste and toss. Serve with grated Romano cheese. Serves 4.
