Oyster and Potato Surprise Cakes

Ingredients:

  • 3 slices bacon
  • 6 medium potatoes
  • 1/4 cup sour cream
  • 50 g butter

Directions:

  1. Remove rind from bacon and chop flesh roughly.
  2. Cook in a fry pan until crisp, turning often.
  3. Cool.
  4. Drain oysters.
  5. Combine oysters and bacon.
  6. Peel potatoes and cut into quarters.
  7. Cook in boiling salted water for 10 minutes or until tender.
  8. Drain.
  9. Mash potatoes with horseradish cream and sour cream.
  10. Form half-cupfuls of mixture into patties.
  11. Make a hollow in centre of each pattie and fill with oyster mixture. Mould potato over cavity.
  12. Roll patties in breadcrumbs.
  13. Heat butter in a fry pan and cook patties on each side until golden.
