  1. Preheat the oven to 500°F Line a rimmed baking sheet with aluminum foil, shiny side up. This helps prevent the potatoes from sticking. Place the prepared sheet pan in the oven.
  2. Cut the potatoes into wedges about 1/4 inch thick at their widest point. In a large bowl, toss the potatoes with the garlic cloves, melted fat, plenty of salt, and the rosemary sprigs.
  3. Carefully remove the hot pan from the oven. Quickly pour the potatoes and garlic into the pan and distribute them into an even layer. Immediately return the pan to the oven and lower the heat to 450°F Roast until tender, about 35 minutes. You do not need to turn them during cooking.
  4. About 5 minutes before the potatoes have finished cooking, remove the pan from the oven and loosen the potatoes. Return them to the oven to finish cooking.
  5. Pour the potatoes and garlic into a warm serving bowl, discard the herb sprigs, season again with salt, and serve immediately.
