Onion-Topped Chicken with Berry Sauce

Ingredients:

Directions:

  1. Sprinkle chicken with salt. In a large skillet, brown chicken in butter on all sides. Remove and keep warm.
  2. In the same pan, saute the onion, celery and green pepper in drippings until tender. Add the broth, jam, orange juice, vinegar, parsley, and thyme. Cook and stir until jam is melted.
  3. Return chicken to the pan. Cover and cook for 30-35 minutes or until chicken juices run clear. Serve chicken with sauce. Yield: 4 servings.
