Directions:

  1. Poach chicken breasts and chop to make 3 cups and set aside.
  2. Chop the onion, peppers and celery. Slice mushrooms.
  3. In a large pan, melt butter and saute the onion, celery, peppers, and mushrooms. Add chicken, chicken broth, tomato juice, olives, chili powder, and salt. Simmer this mixture for 30 minutes
  4. Preheat oven to 350 degrees.
  5. Break spaghetti into worm size pieces. Cook spaghetti in boiling water until tender, about 6 minutes.
  6. Drain spaghetti and fold into simmering sauce. Stir in cheese.
  7. Place in a large greased casserole. Bake 30 minutes.
