Old-Fashioned Eggless Spice Cake,[with Maple Frosting (Opt.)]

Ingredients:

  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1 tsp mace
  • 1 tsp cloves
  • 1/2 cup cooking oil
  • 1-1/4 cup water
  • 1 tbsp vanilla

Directions:

  1. Sift, or stir together all dry ingredients, in a large mixing bowl.Add cooking oil with water, and vanilla.Stir until well mixed. Bake in layers in a 375 degree oven for 20 minutes. Or, in a loaf pan at 350 degrees for 45 minutes. [Cool in pan.]
  2. When cool remove to serving plate, and ice the cake with Maple Frosting.
  3. Maple Frosting
  4. Tablespoon hot coffee
  5. Tablespoons maple syrup
  6. Teaspoon vanilla
  7. Powdered sugar
  8. Mix together coffee,maple syrup,and vanilla, beating in enough powdered sugar to make a thick spreadable frosting. Frost cake.
  9. Hint: this is good spread on graham crackers for the children's snack.
