Ingredients:

  • 1 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 (15 oz) can pumpkin
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 tsp vanilla

Directions:

  1. Preheat the oven to 350 degrees.
  2. Line a muffin tin with muffin papers.
  3. In a large bowl mix together the dry ingredients: flour, sugar, protein powder, baking powder, baking soda, salt, and cinnamon.
  4. Add the pumpkin, eggs, oil, and water. Mix until just combined.
  5. Fill muffin cups 3/4 full. Bake for 25-30 minutes, until center springs back.
