Ingredients:

  • 1 cup milk , plus
  • 2 tbsp milk
  • 1 tsp vanilla
  • 2/3 cup oatmeal, ground (we use the coffee grinder to make a flour out of the oatmeal)
  • 3/4 cup flour
  • 2 tbsp brown sugar
  • 3/4 tsp salt
  • 1/2 tsp cinnamon or 1/2 tsp allspice
  • 1/4 tsp nutmeg

Directions:

  1. Heat a griddle over medium heat.
  2. Sift the dry ingredients into a large bowl.
  3. In another bowl, lightly whisk the egg, and blend in the wet ingredients.
  4. Stir into the dry ingredients carefully to eliminated lumps, but do not overbeat.
  5. Melt a pat of butter in the pan before cooking each pancake.
  6. Spread 1/4 to 1/3 cup mixture for each pancake.
  7. The mix may be runny, so be sure the pancakes do not run together.
  8. Cook about a minute on each side.
  9. Serve warm.
  10. We recommend real maple syrup for these!
