Odessa-style Mushrooms In Sour Cream

Ingredients:

Directions:

  1. Melt a bit of butter in a frying pan over a medium heat.
  2. Finely chop the spring onion and saute briefly.
  3. Clean the mushrooms and stir into the frying pan with the spring onion.
  4. Cook for 5-6 minutes until the mushrooms are just going soft.
  5. In a small bowl, combine 1 tsp butter with the flour and mix into a smooth paste.
  6. Stir into the mushroom mixture and cook for 3 minutes or until thick. Season with salt and pepper, and stir in the sour cream and cream.
  7. Preheat oven to 180 degrees.
  8. Pour the mushroom mixture into a baking/serving dish.
  9. Sprinkle grated cheese on the top and dot with the remaining butter. Bake for 20-25 minutes until the mushrooms are bubbling and the top is just colouring.
