Ingredients:

  • 1/2 cup butter
  • 2/3 cup sugar
  • 2/3 cup regular rolled oats
  • 1 tsp vanilla
  • whipped cream (optional)

Directions:

  1. Preheat oven to 325.
  2. In a medium pan melt butter.
  3. Remove from heat, stir in sugar, corn syrup, and oats.
  4. Stir in eggs and vanilla.
  5. Pour into unbaked pie crust.
  6. Top with pecans.
  7. Cover edges of pie with tin foil to prevent overbrowning.
  8. Bake for 25 minutes.
  9. Remove foil, bake for an additional 20-25 minutes until set.
  10. Cool on a wire rack.
  11. Top with whipped cream if desired, and serve.
