Oatmeal Cake W/ Coconut Topping

Ingredients:

  • 3/4 cup butter
  • 3 eggs
  • 1 1/2 cups brown sugar
  • 1 1/2 tsp vanilla
  • 1 1/2 cups white sugar
  • 2 cups sifted flour
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1 cup coconut

Directions:

  1. Cake: Pour boiling water over oats and let sit for 20 minutes.
  2. Cream butter, sugar, eggs, and vanilla.
  3. Mix flour, cinnamon, baking soda, salt, and baking powder.
  4. Add to butter mixture and mix well.
  5. Add oatmeal mixture and mix well.
  6. Bake in greased 13 X 9 inch glass pan at 350 degrees for 40 minutes.
  7. Topping: Mix brown sugar, milk, butter, and vanilla in pan and cook over very low heat until melted.
  8. Add nuts and coconut, stir well.
  9. Remove from heat.
  10. Cover slightly cooled cake.
