Ingredients:

  • 3/4 cup amish starter
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 cup applesauce (may sub pureed carrots or bananas)
  • 1/2 cup natural bran
  • 1/2 cup oats
  • 1 tsp salt
  • 1 1/2 cups cake flour (may sub whole wheat flour but the muffins will be more tense)

Directions:

  1. Beat together wet ingredients til just mixed.
  2. Add remaining ingredients and stir until just mixed (batter should be a little lumpy).
  3. Fill greased muffin tins 2/3 full and bake 30 minutes at 375 degrees.
