Nutty Apple Coconut Muffins

Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 teasp. baking soda
  • 3/4 teasp. salt
  • 1/2 teasp nutmeg.....fresh grated gives the best flavor
  • 2 eggs
  • 1 cup + 2 tbsp. sugar
  • 1/3 cup vegetable oil
  • 1 1/2 cups chopped walnuts

Directions:

  1. In large bowl combine... flour, baking soda, salt and nutmeg
  2. In another bowl.. beat eggs, sugar and oil
  3. Stir in apples, nuts and coconut
  4. Stir in dry ingredients.... stir until just moistened...
  5. Fill 18 greased muffin cups 3/4 full
  6. Bake at 350' F for 25 - 30 minutes
  7. Cool in pan for 10 minutes before removing to a wire rack...
  8. Makes 18
