Nsa Vegetable Ginger Herb Soup

Ingredients:

  • 12 cups water
  • 2 large onions, diced
  • 2 cups celery
  • 1 cup parsnips
  • 6 large carrots
  • 8 oz mushrooms
  • 1 cup zucchini
  • 4 oz ginger
  • 1 oz dill
  • 1/2 oz basil leaves
  • 1/2 oz rosemary

Directions:

  1. Put all ingredients into pot.
  2. Heat to boiling then turn down to simmer.
  3. Simmer for 2 - 3 hours.
  4. Serve as is or puree.
