No salt added vegetable soup - Vegetarian - for extra low sodium diet
Ingredients:
12 cups water
2 large onions, diced
2 cups celery
1 cup parsnips
6 large carrots
8 oz mushrooms
1 cup zucchini
1 cup yellow squash
2 cup winter squash
4 oz ginger
1 oz dill
1/2 oz basil leaves
1/2 oz rosemary
Directions:
1. Put all ingredients into pot.
2. Heat to boiling then turn down to simmer.
3. Simmer for 2 - 3 hours.
4. Serve as is or puree.
