Ingredients:

Directions:

  1. Fire up the grill!
  2. In a small bowl, thoroughly mix the first six ingredients; set aside.
  3. Rinse the Cornish hens.
  4. Pat them dry with paper towels.
  5. Split each hen in half, and brush them with olive oil.
  6. Rub the hen halves with the spice mixture, coating them well.
  7. Grill over medium-hot coals or broil in an aluminum foil lined broiler pan 12-14 minutes per side or until done.
  8. Gently but generously brush with maple syrup and grill or broil for 3 minutes longer.
  9. Sprinkle with scallion slices before serving.
