Ingredients:

Directions:

  1. Soak beans in cold water overnight.
  2. Put all ingredients in a large stock pot.
  3. Or, saute onion, celery, garlic first, then add other ingredients.
  4. Add enough cold water to cover ingredients.
  5. Bring to a boil, then cover and lower flame.
  6. Simmer over low heat for about 2 1/2 hours.
  7. Stir every 1/2 hour or so.
  8. If mixture becomes too dry, add another 1/2 c of water.
  9. Serve over cooked white rice.
